Dr V Gerbi

Dr  Vincenzo Gerbi is Full professor of Enology at University of Turin, Italy.

He has significant experience in the application of technological innovations in enology. In addition, he is Head of national research projects. He is member of the Italian Academy of Vine and Wine and the Italian Society of Food Technology.

Vinifera Teaching: He teaches enography in the Wine Processing module of M1 and also teaches M2 students in Italy, supervising many students on their thesis.

Research Interests: Vincenzo’s research topics concern, in particular, oenology and process innovation in wine technology.

The research themes characterizing the history of his work concerned the rationalization of fermentation and maceration processes to improve the varietal characteristics of wines deriving from indigenous vines, the stabilization of wine color, the reduction of the use of sulphites.
