Dr E Boselli

Dr  Emanuele Boselli is Associate Professor of Enology at the University of Bolzano, and responsible for the Vinifera EuroMaster in the second year of the international programme.

Associate Professor in Food Science and Technology at UNIBZ since 2017, Dr Boselli previously worked at Marche Polytechnic University, Ancona, Italy.  He is the head of Oenolab, located at NOITechPark Südtirol/Alto Adige, Bolzano, Italy.

Vinifera Teaching:

During the M2, Dr Boselli lectures on two modules: ‘Wine production processes and plants’ and ‘Sensory analysis approaches for mountain wines’.

Research Interests:

Dr Boselli’s research focuses on innovations in winemaking practices and in the production of alcoholic beverages.  In addition, he studies multiparametric analysis and high resolution instrumental chemical analysis coupled on-line to mass spectrometry to evaluate the quality of raw materials, intermediate products and finished products.  These include must, wine, ingredients, materials and packaging including closure systems.  In addition he evaluates the effects of different production, conditioning and storage technologies.  He also researches chemometrics applied to sensory and instrumental analysis.

International Development:

Emanuele Boselli has links with: ISVV – Institut des Sciences de la Vigne et du Vin, Bordeaux, France and the Food Experience and Sensory Testing Lab at Massey University, New Zealand.  He collaborates with the Department of Food Science, Stellenbosch University, South Africa and the Department of Nutrition and Food Science, University of Granada, Spain.
